Chicken Patties

Recipe Ingredients

  • Puff pastry ½ kg
  • Ingredients for filling
  • Boiled & shredded chicken 300 gm
  • Onion chopped 1
  • Egg 1
  • Black pepper 1 tsp
  • Coriander leaves 1 tbsp
  • Mayonnaise 1 tbsp
  • Oil 1 tbsp
  • Tomato ketchup 2 tbsp
  • Cream 2 tbsp
  • Salt ½ tsp


Recipe Method

  1. Heat oil in a pan and fry 300 gm boiled and shredded chicken for 1 minute. Add 1 chopped onion and fry well. Now add 2 tbsp cream, 1 tbsp mayonnaise, 1 tsp black pepper, ½ tsp salt and 2 tbsp tomato ketchup. Cook till water dries. Now turn the flame off and add 1 tbsp ginger juliennes. Roll puff pastry and cut by using cutter. Grease mold and put a piece of puff pastry on it. Spread chicken filling on it. Put other piece on top, brush beaten egg and press well. Lastly bake in a pre heated oven for 30 minutes. Chicken patties are ready to serve.

Quick Kheer

Meethay Kaddu Ka Halwa

Recipe Ingredients

2 kg Pumpkin grated
6 Green cardamom
50 gm Pistachios
100 gm Coconut sliced
250 gm Khoya
250 gm Sugar
250 gm Ghee
1 tbsp Kewra water

Recipe Method

In pan, put together 2 kg grated pumpkin and 1 glass water. Cover and cook over low flame till tender. Add 250 gm ghee and fry well. Now add 250 gm sugar and 6 green cardamoms. Cook till water dries. Now add 100 gm sliced coconut and 250 gm Khoya. Lastly add 1 tbsp Kewra water and turn the flame off. Put mixture in serving dish, garnish with chopped pistachio and serve.

Mutton Yakhni

250 gm Mutton
1 piece Ginger
1/2 kg Tomato
1 small Onion
4 Garlic cloves
6 glasses Water
1 tsp Black Pepper
1 tsp Cumin Seeds
1/2 tsp Turmeric Powder
1/2 bunch Coriander Leaves
1/2 tsp Salt


Recipe Method

In a pan, put together 250 gm mutton, 6 glasses of water, 1 tomato, 1 small onion, 1 tsp black pepper, 1 tsp cumin seeds, 1 piece of ginger, 4 cloves of garlic and 1/2 tsp salt. Cook over low flame till 4 cups stock remains. Turn the flame off, add 1/2 tsp chopped coriander leaves and serve.

Khatti Moong Masoor Ki Daal

1/2 cup Oil
2 tsp Cumin seeds

Recipe Method

Wash 1/2 cup split green lentils and 1/2 cup red lentils. Boil with 2 tomatoes, 12 button red chilies, 50 gm dry mango, 1 tsp turmeric, 1 tsp salt and 2 glasses of water till tender. Now mash the lentils well. heat 1/2 cup oil in pan, add 6 curry leaves, 4 cloves of garlic and 2 tsp cumin seeds. Fry well and pour on top of lentils mixture. Garnish with chopped green chilies and coriander leaves. Serve hot.

Aaloo Gajar Kay Kabab

  1. Mash boiled carrot and boiled potatoes in a bowl, add 1 chopped onion, salt to taste, black pepper, crushed red pepper, dry mango powder, coriander leaves and mint leaves. Mix very well.
  2. Now form into patties, shallow fry till golden brown.

Chicken Eggy

Recipe Ingredients

  • Chicken breast2
  • Eggs boiled2
  • Mozzarella cheese1 packet
  • Worchester sauce2 tbsp
  • Parsley chopped¼ bunch
  • Garlic paste1 tbsp

  • White pepper powder¼ tsp
  • Saltto taste
  • Oil1 – 2 tbsp

Recipe Method

  1. Cut each chicken breast and open into book form, beat well using hammer and press very well.
  2. In a bowl mix together 2 grated boiled eggs, 1 packet of grated mozzarella cheese, salt to taste, ½ tsp black pepper, ¼ tsp white pepper powder and ¼ bunch of chopped parsley. Mix very well.
  3. Marinate chicken breast with a little salt, 2 tbsp Worchester sauce and 1 tbsp garlic paste.
  4. Spread one side of marinated breast with egg mixture, fold and cover the top of stuffing with chicken.
  5. Shallow fry the chicken a little from each side.
  6. Then put chicken in oven proof dish, bake in a preheated oven on 200 degrees for 8 – 10 minutes.

Reshmi Paratha

  • Flour½ kg
  • Yeast1 tsp

  • Clarified butter as required
  • Cream1 cup

Recipe Method

  1. In a bowl take ½ kg flour, 1 tsp yeast, ½ tsp salt, 1 cup cream and 2 tbsp sugar with water as per requirement, kneed it and keep it for half an hour.
  2. Now roll a roti of this dough pour ½ cup clarified butter on it and sprinkle little bit of flour and make a roll.
  3. Now cut the ball with the help of knife and refrigerate for half an hour.
  4. Now roll it like a roti and fry it on griddle with hot clarified butter.
  5. Delicious reshmi parathay are ready to serve.

Achaari Mooli Ky Parathay

  1. Take 2 cups flour and add in some salt, mix it and make dough. Make a thick paste by combining 2 tbsp flour and 2 tbsp water. Take a bowl and add in 6 eggs and add in chopped green chilies, ½ bunch chopped green coriander, ½ tsp turmeric, ½ fresh milk, 1 tsp crushed black pepper and 1 tbsp red chili flakes. Beat it. Take clarified butter in the pan cook eggs in it and keep on moving the spoon. Roll the dough add the egg mixture on it and then cover it with paratha. Cook it on the stove with the wooden spoon. Cook till golden brown and serve hot.

Fried Pastry

  • Khoya125 gm
  • Almond chopped50 gm

Recipe Method

  1. In a bowl mix together 125 gm khoya, 50 gm chopped almonds, 50 gm chopped pistachios, 50 gm chopped walnut and 4 tbsp sugar.
  2. Roll ½ kg puff pastry, cut into big rounds using cookie cutter.
  3. Now put a little khoya mixture in centre of each round, brush edges with water, top with another round piece of puff pastry.
  4. Press the edges well to form it into pasty.
  5. Lastly deep fry each pastry until golden brown and crisp. Then remove in a serving dish, top with honey and serve.

Milky Bread

Recipe Ingredients

  • Flour1 kg
  • Salt1 tsp
  • Milk½ liter
  • Sugar1 – 1 ½ tbsp
  • Yeast30 gm

Recipe Method

  1. Heat a little milk, now in a bowl mix together lukewarm milk, 30 gm yeast and 1 ½ tbsp sugar. Mix well till sugar is dissolved.
  2. Spread flour on table, add in 1 tsp salt. Make cavity in centre of the flour. Pour yeast mixture in centre of flour.
  3. Now add the remaining milk and butter to flour, mix well and knead to dough until dough is smooth.
  4. Put the dough in a glass bowl, seal using plastic foil. Keep in a worm place to rise the dough.
  5. Grease a small bread mold very well with butter or oil. Fill the mold with a piece of dough, make it sure the smooth part remains on top.
  6. Now press the edges of dough and spread it till the corners of mold. Now keep it in a warm place and allow to rise as much as possible.
  7. Brush top with beaten egg, now bake in a preheated oven on 240 degrees for 30 – 35 minutes.
  8. Make 3 small balls with the remaining dough, roll into knot form until these are 8 inches long.
  9. Now make it into rope form altering each other.
  10. Put on a greased baking tray, brush top with beaten egg, sprinkle dry sesame seeds and keep aside to rise for 30 – 35 minutes.
  11. Now put in a preheated oven and bake for 15 – 18 minutes.
  12. Make small balls with the remaining dough, brush each with beaten egg.
  13. Make breads of different shapes. Keep aside till rise and doubled in volume.
  14. Then put in oven and bake for 15 – 18 minutes till golden brown.
  15. Remove from oven and serve.

Club Sandwiches

  3. Butter the toasts.
  4. Mix the mayonnaise and mustard paste.
  5. Apply the mayonnaise mix on the slices.
  6. Place sliced eggs on mayonnaise and mustard coated slices.
  7. Now place buttered toast and put lettuce leaves on it.
  8. Place a cheese slice on it.
  9. Also place tomatoes and cucumber slices.
  10. Now add chicken on it.
  11. Cover with mayonnaise and mustard paste coated slice.
  12. Slice in half and insert toothpick in it.
  13. Serve with fries.

Cheese Cake

Recipe Ingredients

1 Kg Milk
2 Eggs
1 cup Cream
2 cup Icing sugar
30 gm China grass
250 gm Creamy cheese
4-5 tbsp Butter
as required Season food

Recipe Method

I a pan fry 1kg milk with 2cup of sugar to dissolve
the sugar. When milk get thick then add 1cup cream, 250g creamy cheese and 2
egg yolks in a mixing bowl beat them with the help of beater, put it into milk
mixture and fry on low flame. Make sure that milk should not boil during the
process. In another pan add 30g china grass with water as required, fry until
the grass gets dissolve. Then add milk mixture and mix it properly with help of
egg beater. Now grease the cake trey on 4-5tbsp butter, pour the mixture and
set aside for a while in room temperature. Now placed the mixture in fridge. In
the end take out the cake from fridge and garnished with as required season
food and cream and serve it.  

Chili Chicken

Recipe Ingredients

1/2 kg Chicken bones
250 gm Green chilies
1 cup Chicken stock
3-4 Talhaar chili
1-2 Leaves spring onion
1 tbsp Chopped garlic
1 tbsp Chopped ginger
1/2 tsp Crushed black pepper
2 tbsp Chili garlic sauce
3 tbsp Soya sauce
2-3 tbsp Oil
to taste Salt

Recipe Method

In a pan heat oil 2-3 tbsp add 3-4 talhar chili slices and fry then set aside. Now in the oil, add 1 tbsp chopped ginger, 1 tbsp of finely chopped garlic and 1/2 kg chicken then simmer it for 2-3 minutes on high flame. Now add 125 gm of sliced green chilies and simmer it for 2-1 minutes on high flame. Then add 3 tbsp soya sauce, 2 tbsp chili garlic sauce, 1 cup stalk, 1/2 tsp black pepper and salt to taste, cook it on low flame. When mixture starts drying add fried talhar chili slices and dish out.  Garnished it with 1-2 spring onion stems and serve it.

Afghani Chicken

Recipe Ingredients

1/2 Kg chicken breast boneless
1 onion
1 cup yogurt
20 Garlic cloves
1 tsp Crushed black pepper
3 tbsp Oil
to taste Salt

Recipe Method


In a pan add 3 to 4tbsp
oil and fry 1 onion for 2 to 4 minutes. Now set aside 3 cloves of garlic, make slices
of remaining cloves and put it into the pan for frying. At the same time add 1/2 kg chicken and cook thoroughly. Now put 1tsp crushed black pepper, salt to
taste and 3tbsp lemon juice in 1cup yogurt, mix it well and cook. When the
chicken get tender and dried, then saute with remaining 3 cloves of garlic and
serve it.

Chicken Boneless

500 gm Chicken boneless
2 Black cardamoms
2 Lemon
2 Green chilies chopped
4 Black pepper
6 Green cardamom
1/2 cup Yogurt
1/2 bunch Mint leaves chopped
1 tsp Cumin seeds
1 tbsp Poppy seeds
1/2 tsp Black cumin
2 tbsp Roasted gram
2 tbsp Bihari Masala
3 tbsp Oil


Recipe Method

 
Marinate ½ kg chicken cubes with 2
black cardamom, 4 black pepper, 6 green cardamom, ½ cup yogurt, 1 tsp cumin
seeds, 1 tbsp poppy seeds, ½ tsp black cumin, 2 tbsp roasted gram and 2 tbsp
bihari botti Masala. Keep aside for 10 minutes.Cook in a frying pan till water
dries.Add in 3 tbsp oil and juice of 2 lemons. Simmer on low flame.Lastly add 2
chopped green chilies and ½ bunch of chopped coriander leaves. Serve with
paratha.

Chutney Bharay Shaami Kabab

1/2 kg Beef (cut into cubes)
1 cup Gram lentils
2 Egg whites
3 Black cardamom
4 Black pepper
6 cloves Garlic
1 piece Ginger
1 tsp Black cumin
1 tsp White cumin
1 tsp Whole coriander
1 tbsp Yogurt
2 tbsp Rice flour
to taste Salt
for Chutney
1 bunch Coriander leaves
1 Onion chopped
2 Lemon
3 Red chilies
6 Green chilies

Recipe Method

 
In a pan put together ½ kg meat, 1
cup gram lentils, salt to taste, 4 black pepper, 1 tsp cumin seeds, 6 garlic
cloves, 1 piece of ginger, 1 tsp whole coriander and hot water.Cook till meat
is tender, add 1 tbsp yogurt and cool. Chop well in chopper.
 
 
In blender put together 6 green
chilies, 3 red chilies and 1 bunch of coriander leaves. Blend well.In meat
mixture add 2 tbsp rice flour and 2 egg whites. Mix well.Take a little mixture
in your hands, flatten and top with a little chutney. Make kabab and keep
aside.Now shallow fry with oil as required till golden brown and crispy. Serve
with chapatti.

Beef Nihari

Recipe Ingredients

750 gm Beef
2 Onion
2 tbsp White flour
1/2 kg Milk
2 tsp Garlic chopped
few Green cardamom
1 Bay leaf
1 Cinnamon
2 tsp Garam masala
1 tsp Aniseeds
1 tsp Red chili powder
pinch Nutmeg
pinch Mace
1/2 tsp Turmeric powder
1 tsp Salt
1/2 tbsp Garlic paste
1/2 tbsp Ginger paste
1/4 cup Ghee
Ingredients for garnishing
1 Fried onion
3 Chopped green chilies
1 bunch Green coriander


Recipe Method

Heat oil in a large skillet. Fry the chopped onion till it turns dark brown. Remove and place the fried onions on an absorbent tissue paper, to drain the oil. Crush with your hands.In the same skillet add the beef, garam masala powder, ginger garlic paste, salt, red chili powder, bay leaf, a stick of cinnamon and turmeric powder. Fry until the oil forms a separate layer on top.Then add   the nutmeg   cardamoms, fennel seeds and water. Cook until the beef tenders. Mix the corn flour in milk and pour the mixture in the gravy, stirring continuously.  Reduce the flame to a simmer and cook for another 10 minutes.Serve in a dish and garnish with chopped coriander, brown onions and chopped ginger, lastly sprinkle the garam masala on top and serve.

Punjabi Yakhni Pulao

Recipe Ingredients

500 gm Meat
400 gm Rice
1 Cinnamon
1 Big cardamom
1 Bay leaf
3 Cloves
3-4 Onions
4-5 Green chilies
1/2 cup Yogurt
1 tsp Crushed red chilies
1 tbsp Ginger crushed
1 tbsp Garlic crushed
1/2 tsp Cumin
1/2 tsp Black pepper
1 1/2 tbsp Garam masala


Recipe Method

Wash and soak the rie for 25-30 minutes.
Take a medium sized skillet add the mutton, cinnamon, big cardamom, bay leaf, cloves, chopped onions, crushed red chilies, cumin, black pepper, garam masala and 6 glasses of water. Cook on a low flame.
In a separate pan heat oil and fry the chopped onion still they turn brown. Then add the mutton stock along with the meat. Whip the yogurt and pour it into the meat. When the mixture starts to boil add the rice and whole green chilies. When the water dries, cover and simmer the rice for  5 minutes.
Dish out and serve.
